In Puerto Rico, the cultivation of sugar cane (“caña de azúcar”) and the production of sugar largely forged the local and international identity of Puerto Rico. According to history, the first farms producing the sweetener date to the 16th century. The cultivation of sugar cane went through several periods of economic, technological and social development, culminating in the large central factories in Puerto Rico.
